Our First Recipe: Summer Citrus Grilled Salmon
To kick off “Chef’s Table,” we’re excited to share a perfect summer dish that’s light, refreshing, and bursting with flavor: Summer Citrus Grilled Salmon. This recipe features succulent salmon fillets marinated in a zesty citrus blend and grilled to perfection, served with a vibrant avocado and mango salsa.
Ingredients
For the Salmon:
- 4 salmon fillets
- 2 oranges, juiced
- 2 lemons, juiced
- 1 lime, juiced
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- Salt and pepper to taste
- Fresh dill for garnish
For the Avocado and Mango Salsa:
- 1 ripe avocado, diced
- 1 ripe mango, diced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1 jalapeño, seeded and finely chopped
- 1 lime, juiced
- 2 tablespoons fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Prepare the Marinade:
- In a bowl, combine the orange, lemon, and lime juices with olive oil and minced garlic. Season with salt and pepper.
- Marinate the Salmon:
- Place the salmon fillets in a resealable plastic bag or shallow dish. Pour the marinade over the salmon, ensuring each fillet is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
- Prepare the Salsa:
- In a separate bowl, combine the diced avocado, mango, red bell pepper, red onion, jalapeño, lime juice, and chopped cilantro. Season with salt and pepper, then gently toss to mix. Set aside.
- Grill the Salmon:
- Preheat the grill to medium-high heat. Remove the salmon from the marinade and grill for about 4-5 minutes on each side, or until the salmon is cooked through and has beautiful grill marks.
- Serve:
- Plate the grilled salmon fillets and top with the avocado and mango salsa. Garnish with fresh dill and serve immediately.
